Banana Ice Cream

Lauki halva with banana ice cream
It tastes exactly like what it is - blended up frozen bananas! A quick and easy dessert that hits the spot when craving ice cream. I usually make this whenever I have extra ripe bananas on hand, so that I always have some freezer stock!

Ingredients:
Ripe bananas w/ brown spots
Vanilla essence to taste (optional)

1. Chop up ripe bananas and freeze. I freeze flat in a ziploc bag so they won't freeze in large clumps, which is more difficult to remove and tougher on the blender.

2.  Blend up frozen bananas.  Add some vanilla essence in the blender.

3. Put finished product in a container and stick back in the freezer to get more ice cream consistency because the blender heats it up! It can be eaten right after blending, but will be more like frozen yogurt or as my friends call it "banana goo".  I suppose one could add honey but it is so sweet as is!

I recently tried adding some cardomom powder to the ice cream while blending to temper the banana taste.  It didn't really work - I don't think I added enough.  I'll keep experimenting with that.  Please let me know if you have any ideas!  I was ecstatic when I ended up with this ice cream by accident a few years ago. Now I see many banana ice cream recipes on SCD blogs. I suppose there is only so much one can do with restricted ingredients, so humans end up with common creations. Gives me a unique sense of SCD camaraderie! Because really, who else would think to freeze bananas, blend, and eat straight up? YUM!
