Day 27 - 28. Butternut Squash French Fries a la Burnt

Butternut squash fries a la burnt

After coating the fries with oil, I toss with salt, pepper, and chili powder.  I find that the chili powder tempers the sweetness of the squash. Tasted delicious but half of them literally evaporated as I overcooked to oblivion/charcoal and sliced them maybe too thin? The other half evaporated into my friends' mouths. When my guinea pigs give me the thumbs up, it gives me confidence to serve it at the next dinner party! My friends thought I was nuts for taking photos but I thought my burnt version looked rather 'gourmet'. Note the overripe banana lurking in the corner - that went straight into the freezer and then off to the blender for banana ice cream!

Feeling: Really tired today. Didn't have time for breakfast and that set up the rest of the day; an omelette + smoothie is usually my power start to the day! I think I'm taking on too much (I always go overboard after a flare ends, trying to make up for the lost time) and will have to cut back on something. Not cut back on cooking of course - #1 priority (well, my health is) - but I did have a moment today, motivated by good ol' cranky hunger, when I just did NOT want to cook or be in the kitchen or think about food but just eat, only to find all I had was chicken soup and applesauce on hand. That might have manifested in me cutting my finger during the fries extravaganza. Cutting a butternut squash is no walk in the park but the fries were well worth it! And I'm going to bed very full:)
