Vegan chocolate mousse

Soy chocolate mousse

1 pack of organic silken tofu (14 oz)
Chocolate chips (100 grams or 1/4th of tofu weight) - I use Hu 65% dark chocolate chips. Guittard semi sweet chips are also good if you want milk chocolate
2-3 tbsp maple syrup
1/2 tsp vanilla extract (optional)

1. Melt chocolate chips in microwave in 30 second intervals so the chocolate does not burn, or use double boiler method. Stir in between.
2. Blend all ingredients in blender
3. Pour into dish. Let sit for a few hours or ideally overnight.
Optional: add favorite toppings like orange zest, mint leaves, shredded coconut, berries, etc

Apple or butternut squash chocolate mousse

6 peeled and chopped apples (or butternut squash) (1000 grams)
Chocolate chips (200-250 grams or 1/4th-1/5th of chopped apple weight) - I use Hu 65% dark chocolate chips

1. Boil apples in filtered water for 20 minutes or until very soft
2. Melt chocolate chips in microwave in 30 second intervals so the chocolate does not burn. Stir in between. Or melt using double boiler method - I put the chips on a plate on top of the boiling apples
3. Drain apples, and blend with melted chocolate in blender. (Save the filtered apple water, add a cinnamon stick and enjoy a delicious cup of apple tea! You can also use the nutrient dense water to make oatmeal.)
4. Pour into dish. Let sit for a few hours or ideally overnight.
Optional: add favorite toppings like orange zest, mint leaves, shredded coconut, berries, etc.
