Day 16. Almond Butter Brownies

Straight out of the oven
1 cup almond butter (or cashew, hazelnut, peanut butter, etc)
1/4 - 1/3 cup honey
1 egg (or 2 - 4 Tbsp unsweetened applesauce)
1/2 tsp vanilla
1/2 tsp sea salt
1/2 tsp baking soda

Combine all ingredients in a bowl. If the almond butter does not have much oil in it or you are using from the bottom of the jar, add a tablespoon of oil to ingredients. Transfer to a 8x8" dish. Bake at 350 for 20 minutes.

Tips:
- Almond butter/flour goods do not cook as evenly as normal flour. If you are running into the problem of the top cooking well but the middle undone, you can pour out a thinner layer of batter and/or cook for longer at a lower temperature (like 325°F).
- I use Trader Joe's almond butter. You can also make blanched almond butter with blanched nuts or blanched almond flour.
- Peanut butter brownies can be made as well but almond butter is easier to tolerate.
