Spinach Curry



Ingredients:
Quart of spinach (enough to fill a medium sized wok)
3 tbsp oil
1/4 tsp mustard powder (ground up mustard seeds)
1/2 tsp turmeric (haldi)
1 tsp cumin powder (jeera)
1/8 - 1/4 tsp chili powder
1/2 tbsp salt
1/2 tsp garam masala
1.5 cup tomato juice (Campbell's)

Instructions:
1. Chop the spinach into little pieces.

2. Heat the oil in a pan on low.  After a few minutes add the tomato juice and spices.  Let cook for 6 - 8 minutes.

3. Add the spinach and stir.  Cook on high for 10 minutes, stirring occasionally.  The result should look like the first picture at the top!
