Serves 2
Salad
2 avocados, diced
1 english cucumber, diced or regular cucumber
1 large tomato, diced or 8 cherry tomatoes, halved
Salt and pepper to taste
1/4 cup sliced red onion (optional)
Pumpkin seeds (optional, sprinkle at the end)
4 chopped dates (optional)
Dressing
2 tbsp olive oil
1 tbsp lemon juice
1 tsp maple syrup (optional)
1. Mix all salad and dressing ingredients. Mix pumpkin seeds just before eating so they stay crunchy.
2. Stores well for 1-2 days in fridge.
