Sheena: I hope this blog helps others find low carb meal ideas. After my Mom was diagnosed with a brain tumor, she started the keto diet. I have been on and off the Specific Carbohydrate Diet / Paleo for ulcerative colitis. I currently follow a more moderate diet which incorporates small amounts of grains which work for me.
