Masala rasam bone broth

16 ounces ready made bone broth
5 cups water
2 stalks celery or roughly 3/4 chopped cup
1/2 onion or roughly 1/3 chopped cup
1 roma tomato or roughly 3/4 chopped cup
1 tsp salt / Himalayan pink salt
1 tsp pepper
1/2 tsp garam masala
1/4 tsp turmeric (optional)
4 green cardamom/elachi
6 cloves
2-3 dry bay leaves
1 tbsp coriander/dhania powder
at least 1/4 cup mint leaves
at least 3/4 cup chopped coriander leaves with stalks

Heat 4 cups of water on low flame in large pot.

Add celery, onion, tomato, salt, pepper, garam masala, turmeric, cardamom, cloves, bay leaves, coriander powder, mint leaves, and coriander. Add one more cup of water or vegetable broth. Heat for 30 minutes on medium, add 1 cup water, and heat for another 15 minutes.

Add bone broth and heat for another 15 minutes. Strain. Freeze if you will not use within five days.
