Keto sambar



150gm Pumpkin skinned and diced or bottlegourd/giya for lower carb
1 medium size onion chopped 
1 medium tomato chopped 
2 green chillies halved, optional 
Veggies of choice (carrots, green beans, drumsticks, eggplant, etc)
Salt 
2 Tblsp sesame oil  
1/2 tsp mustard seed 
1/2 tsp cumin seed 
1 pinch asafoetida 
2 curry leaves 

Sambar powder: Buy in store or make your own. To max, mix 1/2 tsp turmeric powder, 1/2 tsp chili powder, 1 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp fenugreek powder, and a pinch of asafoetida.

Add pumpkin, onion, tomato, green chillies, salt and sambar powder in a pressure cooker with 250ml water. Allow to boil until 3 whistles. Then open the cooker and mash the mixture completely. In a small pan heat sesame oil. Add mustard seed, cumin seed, asafoetida, and curry leaves. Allow them to splutter and add it into the pressure cooker. Add veggies of choice and boil for 2 more mins.

For SCD diet, you can use split pea lentils instead of pumpkin as the base. Soak lentils for 24 hours, and switch out water every 12 hours.
