Keto brownies w/ chocolate chunks


A little bitter. Need to try different sweetener or more sweetener.

One-third recipe - Makes 8 pieces.

1/3 cup macadamia nuts
little less than 1/8 teaspoon celtic sea salt
little less than 1/8 teaspoon baking soda
1 ounce 100% dark chocolate, chopped
2 tbsp 2 tsp coconut oil, melted
2 tsp erythritol
1 large egg
1/3 teaspoon vanilla stevia

In a food processor or blender, pulse macadamia nuts, salt, and baking soda until the texture of gravel. Pulse in chocolate and coconut oil until smooth. Pulse in erythritol, eggs, and stevia.

Transfer mixture to a greased 8 x 4 inch baking dish. Bake at 350°F for 22-27 minutes, batter will set up when cooled. Cool 1 hour.
