The biggest challenge for me when starting SCD some years ago was channeling my inner carnivore. My meat experience up to that point included biannual visits to Burger King for chicken nuggets (though who REALLY knows what that stuff is made out of..) and soy hot dogs which I love(d). After I had successfully hopped onto the full speed ahead meat train, it then took me a year to graduate to seafood and be able to eat more than a bite of fish. And now look at me! I tried doing a vegetarian version of SCD, but I found myself eating mostly almond butter baked goods (yum!) and that ended up not being such a good thing because I wasn't getting a balance of food groups/nutrients. Meat, I literally feel, is the easiest food to tolerate and in the beginning of the diet, it is a good option as nuts, raw fruits and veggies, beans, and lentils are out of the picture. Sometimes I get really disillusioned with meat; it took me forever to finish my dinner today (truth be told: some of it is still sitting next to me as I take a blog break), which is what inspired me to write this post!
